The recipe below is based on the original plain version, though you can add any filling of your choice. I recommend you use cheese of some sort, so below is based on mozzarella. Ingredients (makes 6): 800g peeled potatoes 70g cornflour 15ml olive oil Salt & pepper 20g Parmesan 30g grated/blocked mozzarella Method: 1. Chop up potatoes into small cubes 2. Add to a pot of boiling water and simmer for 10 mins until soft. Then drain and allow to cool for 5 mins 3. Mash potatoes with masher. Then add cornflour, salt and pepper. Combine using your hands until you form a dough 4. Separate dough into 6 evenly sized balls, then add filling to the centre, moving to dough around to close up tight. Press to form cake shape 5. Add olive oil to a preheated pan, then add potato cake to pan, searing both sides for 3-4 mins until crispy. 6. Remove with spatula, set aside for 3-5 mins and enjoy!
