Chop up potatoes into small cubes
Add to a pot of boiling water and simmer for 10 mins until soft. Then drain and allow to cool for 5 mins
Mash potatoes with masher. Then add cornflour, salt and pepper.
Combine using your hands until you form a dough
Separate dough into 6 evenly sized balls, then add filling to the centre, moving to dough around to close up tight. Press to form cake shape
Add olive oil to a preheated pan, then add potato cake to pan, searing both sides for 3-4 mins until crispy.
