@cookingwithaila My best tomato soup recipe that I’be trial & errored for the last 11 years since I came to the U.S., so you can learn in under 60 seconds! Ingredients: • 5–6 medium tomatoes (on vine) • 1 box cherry or candy tomatoes • 1 white onion • 1 bell pepper • 1 clove garlic • 1 tbsp olive oil • 1 tbsp Italian seasoning • pinch of salt • 1 tbsp black pepper • 2 cups chicken or veggie stock • 2 cups water • 1 tbsp tomato paste • 1 can coconut milk Instructions: 1️⃣ Roast tomatoes, onion & bell pepper with olive oil, salt, pepper + Italian seasoning at 315°F (157°C) for 1 hour until soft + caramelized. 2️⃣ Blend roasted veggies with stock + water until smooth. 3️⃣ Pour into pot, add tomato paste + coconut milk. 4️⃣ Simmer 10–15 min until creamy + rich. 5️⃣ Serve warm with grilled cheese 🧀 or a drizzle of olive oil. #tomatosoup #souprecipe #fallrecipes #quickmeals #tomatosouprecipe
