Ingredients

  • 1 lb ground lamb
  • 1 tbsp olive oil plus
  • 1/4 cup cooking onion (diced, finely)
  • 4 cloves of clv garlic (finely minced)
  • 1 tsp paprika
  • 1 tsp allspice
  • 1/2 tsp pepper flakes (red)
  • 1/4 tsp ginger root
  • 4 servings salt (to taste)
  • 4 servings bell pepper (to taste)
  • 1/4 cup mint (fresh, plus more for garnish, chopped)
  • 1/4 cup flat leaf parsley (plus more for garnish, chopped)
  • 1 cup tumeric (or other rice)
  • 4 servings ground lamb
  • 1 slice of from a tomato (diced,)
  • 1 cucumber (diced, peeled, and)
  • 1 cup hummus (homemade, store bought, or)
  • 1 cup feta cheese
  • 2 pita breads (for serving, optional,)

Instructions

    Heat a large saute pan over medium heat.

    Add olive oil.

  3. 3

    When oil is hot, add onions and garlic.  Sauté for 5 minutes, until starting to soften.

    Add ground lamb.  Brown lamb until cooked through.

    Add paprika, allspice, red pepper flakes, ginger, salt and pepper.

    Mix until fully combined, cook for 1-2 minutes.

    Remove from heat and stir in fresh herbs.

    In a bowl, layer Turmeric Rice, then top with some of the spiced ground lamb, tomatoes, cucumbers, hummus and feta.

    Sprinkle with more fresh mint and parsley if desired.
