Add in the mayonnaise, garlic, oil and lemon juice. Mix until well combined. Cover and let it marinate for at-least 1 hour. Prepare the sauce by mixing mayonnaise, sour cream, buttermilk, salt pepper, paprika powder, garlic powder, hot sauce, lemon juice, ketchup in a bowl. Whisk until smooth and creamy. Make the sumac onions by mixing onions, parsley , sumac, salt lemon juice in bowl. In a pan, heat clarified butter over medium heat. Once melted, add the chicken and cook in batches, ensuring not to overcrowd the pan. Cook for about 8-10 minutes, tossing occasionally, until the chicken is fully cooked through. Assemble the wrap by warming the tortilla, then adding sauce, Sumac onions, chicken, tomatoes, cucumber, pickled cucumbers, French fries, and more sauce.
