Ingredients • 1 t Olive oil (for frying) • 2 Tbsp grated Parmesan • 1 sheet rice paper • 2 eggs • 2 Tbsp tomato sauce • 1 handful Fresh mozzarella, torn • Fresh basil leaves • Pinch Italian seasoning • Salt & pepper, to taste Method 1. Heat a drizzle of olive oil in a nonstick pan over medium heat. 2. Sprinkle Parmesan evenly into the pan, then immediately press the rice paper sheet on top so it sticks. 3. Crack 2 eggs directly onto the rice paper. Season lightly. 4. Spoon tomato sauce over, then add mozzarella, basil, and Italian seasoning. 5. Cook until the rice paper is golden and crispy and the eggs are mostly set. 6. Carefully flip in half 7.
