Dice chicken breast into small cubes, season with 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp paprika, 1/4 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp chili powder.
Drizzle with 1/2 tbsp avocado oil and cook.
Microwave corn tortillas for 30 seconds, add mozzarella cheese, chicken, and optionally diced onions, and cilantro.
Spray pan with oil and toast each side, be cautious to not have your pan TOO hot because the corn tortillas will tear.
Drizzle with lime, and dip in my high protein ranch, salsa, or plain greek yogurt
